We recently took a surprise visit to Christmas Tree Wonderland in Bournemouth to see the gorgeous lit up trees and go for a winter walk and grab a yummy hot chocolate just in time for my Mums birthday!

We loved our evening out together - It made me feel so festive.

Mummas Tropical Flapjack!

Today I thought I'd share with you something my Mumma loves to make for our family and I must admit shes pretty damn good at it as even the crumbs get eaten in our house. We're lovers of her tropical flapjack and today I thought I'd share it with you all. I think this treat is perfect for this time of year when its cold and rainy outside or even whilst hovered over a bonfire watching fireworks this golden delight just melts in the mouth and we can't get enough of it! 

Now, as always when I write a cooking/baking post I have to put it out there that we are not professional cooks/bakers and we just do what works for us. Apologies if it doesn't work for you in the same way, but with this recipe it should, I mean how hard can mixing oats be? 

Tropical Flapjack: 

Serves 16

My family really love these flapjacks for a sweet treat, we love to add coconut to ours for a tropical flare.

Ingredients:

225g of oats

50g of butter

75g of sugar

3 tbsp of golden syrup

and any other dried fruits of your choice

- I must start by admitting that we didn't stick to these measurements completely, we had a little bit extra so we threw a bit more in here.

Method:

1. Light oven to gas mark 4

2. Lightly grease your tin

3. Measure sugar, butter and golden syrup & tip them into a saucepan

Tip: have dry ingredients already weighted out so you just have to add them in as you go.

4. Melt sugar, butter and golden syrup over a low heat stirring well

5. Mix in your measured oats

6. Add in any fruit of your choice. 

We added sultanas, dried apricots, coconut and cherries.

7. Mix well making sure all the oats are covered and coated

8. Place mixture into a baking tin 

9. Pat mixture into a baking tin to ensure the oat bind well together for a packed bite

10. Bake in oven for 25 minutes or until golden brown. Leave to rest for 30 minutes to firm up.

Tip: Score the flapjack while warm to get even squares when cutting later. 

Extra: Melt chocolate and drizzle it over the baked flapjack to make it extra special.
